Method

Wash the tomatoes, remove the stems, and slice them into segments about ⅜ inch thick.

Spread them on the dehydrator trays, season lightly with salt and pepper, and dry at 122°F for about 12 hours until they shrink by half and become pliable.

Sterilize a jar and its lid, then dry completely.

Layer the dried tomatoes in the jar, alternating with finely chopped fresh dill and thin slices of garlic.

Gently warm the olive oil without boiling, pour it over the tomatoes until completely covered, then add the wine vinegar.

Let cool completely and store in the refrigerator.
