Homemade sun-dried tomatoes in oil with aromatic herbs and garlic that taste better and cost less than store-bought. A fantastic appetizer for storage or serving at the table.

Method
Wash small tomatoes, pat them dry, and cut them in half (for larger tomatoes, you can scoop out the core with a spoon).
Place them in a deep bowl, add salt, sugar, and Italian herbs, and toss to combine.
Arrange them on a wire rack, place them in the air fryer, and cook on the "Dehydrator" setting for 8 hours (you can also use a food dehydrator).
Warm the olive oil in a saucepan (you can use a 50/50 blend with sunflower oil) until warm, without bringing it to a boil.
In a sterilized jar, layer the sun-dried tomatoes, dried rosemary, and sliced garlic, then pour in the oil so the tomatoes are completely submerged. Seal with a lid and let cool completely.
