Method

Beat the eggs with sugar using a mixer until fluffy and pale.

Add the flour, vanilla, starch, and salt, then mix. Let the batter rest for about 30 minutes.

Fold in the melted and cooled butter. Consistency: the batter drips evenly off a spatula, neither too thick nor too runny.

Preheat the waffle maker and reduce the heat to slightly above medium. Pour about 1.5 tablespoons of batter into the center and close the lid. Wait until the batter spreads out toward the edges, then press the halves together. Flip the waffle maker, and after about 10 seconds, check the color. Bake for about 1 minute, flipping back and forth to achieve an even golden shade.

Remove the waffles from the plates (it's convenient to pry them up with a knife) and quickly roll them into tubes while they are still hot.

Serve dusted with powdered sugar.
