Method
Combine the flour, baking powder, salt, and vanilla sugar in a bowl. Add the cold butter to the flour and rub it in with your hands until it resembles fine crumbs.
Add the sour cream and egg yolk to the crumb mixture, knead into a dough, and shape it into a ball. Wrap the dough in plastic wrap and chill in the refrigerator for 15 minutes.
For the first filling, beat the egg white with sugar using a mixer until glossy and white. Chop the walnuts, add them to the meringue mixture, and stir to combine.
Divide the dough into 4 parts, rolling each out into a circle roughly 20 cm in diameter. Cut each circle like a pizza into triangles—8 pieces per circle.
Place the walnut filling on the wide end of each triangle. Enclose the filling inside the dough and roll up into a pastry.
Arrange a batch of the rolls on a baking sheet lined with parchment paper.
For the second filling, simply mix the cottage cheese with the egg yolk. Similarly, cut the dough circles into triangles, place the filling on the wider end, and roll them up.
Place the cottage cheese rolls on the baking sheet as well. Bake for 15-20 minutes at 180°C (350°F).
Once baked, you can toss the warm rolls in a plastic bag with powdered sugar to coat.
