Method
Finely dice the beef and fat to make ground meat (or use a meat grinder).
Add salt and pepper, mix thoroughly, and divide into 6 portions.
Place a ball of meat onto a preheated skillet and press it down to about 1 cm thick. Cook for 2 minutes on each side.
Slice the tomato into rounds. Finely dice the red onion and pickled cucumber.
For the sauce, combine ketchup, mayonnaise, and mustard in a 2:2:1 ratio, along with the diced onion and cucumber.
Roll out the thawed puff pastry and cut it in half.
Layer cheese, tomato, patty, sauce, cheese, patty, sauce, and cheese, then fold the edges of the pastry over and pinch firmly to seal.
Flip it over, brush with egg yolk, and sprinkle with sesame seeds.
Bake in an air fryer or oven at 160°C for about 30 minutes.
