A classic apple-pear strudel made with paper-thin phyllo pastry and aromatic cinnamon. A wonderful homemade treat to enjoy with tea.

Method

Sift the flour into a bowl and make a small well in the center. Add the salt. Pour in the warm water and vegetable oil. Knead the dough for about 5 minutes until it becomes very pliable and soft. Cover the dough with plastic wrap and let it rest for 25–30 minutes.

Dice the bittersweet apples and pear into small cubes. In a bowl, combine the fruit pieces with the sugar and cinnamon, and mix well.

Roll out the dough using as little flour as possible and as thinly as possible (you can gently stretch it with your hands). It should be very thin and translucent, forming a 40 x 60 cm rectangle.

Spread the aromatic filling over the dough and sprinkle with breadcrumbs. Roll it up. Carefully transfer the strudel to a parchment-lined baking sheet and brush the top with vegetable oil (or strong tea).

Bake in a preheated oven at 180°C (350°F) for about 30 minutes (adjust based on your oven's performance).

Remove the finished strudel from the oven, cover with a towel, and let it cool slightly. Then dust with powdered sugar.
