Method

First, make the strawberry soak: blend the strawberries, add the sugar, and stir to combine.

Place over medium heat, stirring, and bring to a boil. Simmer for 2-3 minutes, then let it cool completely.

Beat the chilled cheese together with the condensed milk until smooth.

In a separate bowl, whip the cold heavy cream with vanilla until stiff and fluffy, then gently fold the two mixtures together.

Set aside 1/3 of the cream for decoration and fold the shredded coconut into the remaining cream.

Briefly dip the ladyfingers into the strawberry soak and arrange them in a single layer, placing ladyfingers around the edges to form a border.

Transfer the cream into a piping bag and pipe it over the soaked ladyfingers. Add another layer of soaked Savoiardi, another layer of cream, and finish with one more layer of soaked cookies.

Lift the border ladyfingers up, secure cookies around the sides, and tie with a ribbon.

Chill the cake in the refrigerator for a couple of hours or overnight.

Before serving, garnish with the reserved cream, fresh strawberry slices, mint leaves, and Raffaello candies.
