Method
Place the berries in a deep enamel bowl, cover with sugar, and let sit for 4-6 hours so the strawberries release their juices.
Set the bowl with the strawberries over low heat and bring to a boil, stirring with a spatula to prevent the sugar from sticking to the bottom.
As soon as the jam begins to boil, add the lemon juice and stir with a wooden spatula.
Simmer the strawberries for five minutes from the moment it boils, constantly skimming off the foam.
Remove the pot from the heat, let it cool slightly, and cover with a clean cloth.
Let the jam rest until completely cooled, about 10 hours.
