Steamed Chinese Egg Custard

Method

Crack the eggs into a bowl, season with salt, add water, and whisk with a fork until smooth.

Strain the mixture into another bowl through a sieve. Remove as many air bubbles as possible.

Cover with plastic wrap and poke several holes in it using a toothpick.

Pour water into a pot to set up a steamer. You can use a pastry ring or make a tall ring out of foil, place it into the water, and set the bowl with the egg mixture on top.

Cover with a lid and place over heat. Steam for about 15 minutes until the omelet is set.

Drizzle with soy sauce, top with dill, and it's ready!
