Method
Thaw the shrimp in cold water with added salt and sugar (for 1 liter of water, use 1 tbsp of salt and 1 tbsp of sugar).
Cook the pasta according to the package instructions.
In a preheated skillet with olive oil, add crushed garlic and thyme sprigs to infuse the oil.
Pat the shrimp dry with paper towels, add them to the garlic and thyme, sear for a couple of minutes on each side, and set aside on a plate.
Add halved cherry tomatoes and chicken broth to the skillet, stirring for 30 seconds to create a sauce.
Add the pasta to the sauce and toss well.
Plate a bed of arugula, top with the pasta and shrimp, and garnish with grated Parmesan and black pepper.
