Method
Rinse the split peas until the water runs clear to remove excess starch.
Simmer the peas for about an hour, stirring frequently and skimming off the foam, until they break down completely.
Sauté the chopped onion until golden.
Add the diced carrots and cook until soft.
Slice the sausage and fry it in the same skillet until all the fat renders out.
Add the bay leaf and whole peppercorns to the skillet.
Add the diced potatoes during the last 10 minutes of cooking the veg and sausage.
Once the sausage has fully rendered, transfer everything from the skillet into the pot with the peas.
Season with ground pepper and let the soup simmer for another 10-15 minutes.
Top with fresh herbs just before serving.
