Spinach Honey Cake

Method

Combine the eggs, sugar, salt, butter, and honey, then place over a double boiler. Whisking constantly, heat until the mixture becomes smooth.

Add the baking soda and, stirring continuously, keep on the heat for 1–2 minutes.

Remove from the heat, stir in the spinach blended in a food processor, and mix well. Let rest for 15 minutes.

Sift in the flour and knead into a soft dough. Shape into 6 or 8 balls and refrigerate for 1 hour.

Roll out thinly on parchment paper and prick all over with a fork. Bake in an oven preheated to 180°C (350°F) for 5 minutes.

Let cool and trim the layers to the desired shape using a cutter or plate. Grind the leftover scraps in a blender into crumbs.

For the frosting, whip the cream cheese, heavy cream, and powdered sugar with a mixer until thickened.

Coat the layers and sides of the cake with the frosting, sprinkle with the crumbs, and refrigerate for at least 3–4 hours.
