Spinach and Cheese Triangles
A crispy and juicy lavash snack filled with tender cheese and greens. Perfect for a quick bite or as a side to soups.

Method
Thoroughly wash the spinach, dry it, and finely chop.
Combine the farmer's cheese (or cottage cheese) with the spinach and mix well. Season with a little salt and pepper to taste if desired.
Cut the lavash into long strips about 8–10 cm wide.
Place a small amount of filling at the edge of each strip and fold the lavash into a triangle, continuing to fold it alternately until the end of the strip.
Transfer the pastries onto a baking sheet lined with parchment paper.
Brush each triangle with an egg yolk and sprinkle with sesame seeds.
Bake in a preheated oven at 180°C (350°F) for 15–20 minutes until golden brown and crispy.
Serve hot or warm as a standalone appetizer or alongside soups.
