Method

Remove the stems and seeds from the peppers, then rinse.

Stuff each pepper with strips of yellow onion.

Pack tightly into clean jars.

Pour boiling water over them for the first time, cover with lids, and let sit for 7–10 minutes (depending on the jar size).

Drain the water, bring it back to a boil, and pour it over the peppers a second time for 5–7 minutes.

Drain the water once more and use it as the base for the marinade: stir in the salt and sugar, bring to a boil, then mix in the essence.

Pour the boiling marinade over the peppers and seal tightly with lids.

Turn the jars upside down and wrap them in a blanket until they cool down completely.
