Method

Grate the garlic on a coarse grater (or pass through a garlic press if you prefer).

Remove the seeds from the hot pepper if you don't like it too spicy, halve it, slice into strips, and mince finely.

Finely chop plenty of fresh herbs.

Combine the chopped herbs, hot pepper, and garlic in a bowl. Mix well. This is your filling.

Cut the tomatoes in half, but don't cut all the way through. Stuff each tomato with the filling.

Sterilize the jars in the oven at 300°F for 10–15 minutes. Boil the lids separately.

Line the bottom of each jar with horseradish leaves and pack the tomatoes in tightly. Pour boiling water over them until they're completely covered.
