Method

Dice the cabbage into small cubes and grate the carrot on the large holes of your grater. Toss both into a bowl, salt generously, and really work it with your hands for a couple of minutes. Let it sit for 15–20 minutes.

Cut the cucumbers into matchsticks and add them to the cabbage and carrot.

Season with black pepper, ground coriander, a pinch of sugar, hot red pepper, and pressed garlic. Pour in the vinegar essence to taste—go easy at first.

Heat the vegetable oil until it's nice and hot, then carefully pour it over the salad.

Toss everything together well, cover it up, and let it marinate at room temperature for about an hour.
