Method

Preheat the oven to 350°F (180°C). In a bowl, mix the softened butter, sugar, and egg.

Beat until smooth, then mix in the honey.

In a separate bowl, sift the flour, add the cocoa powder, cinnamon, ginger, and baking powder. Stir to combine.

Pour the butter and honey mixture into the dry ingredients. Mix thoroughly.

Knead the dough until smooth—it should no longer be sticky. Shape it into a ball, wrap in plastic wrap, and refrigerate for an hour.

Roll out the chilled dough between two sheets of parchment paper to a thickness of 1/4 inch (5 mm).

Cut out shapes using a cookie cutter or a mug. Arrange on parchment paper, leaving space between them.

Bake for 10–15 minutes until lightly golden. Let cool before serving.
