Method

Rinse the cucumbers and slice them thin, about 1/16 to 1/3 inch thick.

Toss with coarse sea salt, mix well, and let sit for about 3 hours. Stir a few times during this period.

Drain the liquid, rinse the cucumbers, and let the water drain off.

In a pot, combine the apple vinegar, rinsed white mustard seeds, turmeric, and peppercorns.

Bring the pickling liquid to a boil and add the sugar.

Add the cucumbers to the brine, toss in the thinly sliced onion, and warm through while stirring until the cucumbers change color.

Transfer the pickles to a sterilized jar, seal it, let cool, and refrigerate.
