Method
Wash the eggs and hard-boil them in boiling water for about 10 minutes.
Quickly transfer the eggs to an ice bath to halt the cooking process and make peeling easier.
Peel the eggs and gently pat them dry with a paper towel.
In a small saucepan, combine the soy sauce, rice vinegar, and water.
Add the honey, minced ginger, and crushed garlic cloves.
Sprinkle the ground red pepper over the top.
Bring the marinade to a boil over medium heat, stirring constantly.
Reduce the heat and let it simmer for another minute or so.
Turn off the heat and allow the marinade to cool down to room temperature.
Carefully place the peeled eggs into a sterilized jar or container.
Pour the cooled marinade over the eggs, making sure the liquid completely submerges them.
Seal with a lid and place the jar in the refrigerator for 24 hours or longer.
