Soviet-Style Winter Soljanka with Cabbage

A traditional braised cabbage dish with vegetables and spices that comes out pleasantly tangy and aromatic. A perfect winter classic for home preserving.

Method

Slice the cabbage into thin matchsticks by hand or with a grater.

Dice the onion into medium cubes and grate the carrot on a medium grater.

Heat oil in a skillet and sauté the onion and carrot for about 10 minutes.

Add the cabbage, mix well, and braise for 20 minutes. If the cabbage seems dry, pour in a cup of boiled water.

Stir in the tomato paste and braise for another 20 minutes.

Season with salt, add sugar, spices, and a bay leaf. Stir everything together.

Finish by adding vinegar and heat through for 2–3 minutes more.

Transfer the hot soljanka into sterilized jars and seal them.

Flip the jars upside down and wrap them in a towel until completely cooled.
