Method

Combine all the dough ingredients and heat over a water bath for about 20-30 minutes until a smooth foam forms, then remove from the heat.

Add the flour and knead into a dough.

Divide the dough into 6-8 portions (or up to 10 for a diameter under 20 cm).

Roll out the layers to the desired size without trimming.

Bake at 180°C (350°F) for 7-10 minutes until a golden sandy or honey color.

For the frosting, combine the sour cream and sugar, and whip until the sugar dissolves.

Spread the frosting evenly across all the layers; it is most convenient to assemble the cake inside a springform ring.

Top the cake with crumbs made from the layer trimmings and place in the refrigerator overnight to soak.
