SOUR CREAM PASTRY ROLLS
Tender and fragrant pastries made from shortcrust sour cream dough with a sweet, crunchy filling. Perfect with a cup of tea or a glass of cold milk.

Method
Cut the cold butter into the flour. Rub it in with your hands, then add the baking soda and vanilla sugar.
Make a well in the center, add the eggs and sour cream, and mix with a fork. Knead into a dough (feel free to add a bit more flour if needed).
For the filling: rub the flour into the cold butter. Add the sugar and vanilla sugar, and mix well.
Divide the dough into 3 parts. Roll out each part to about 3 mm thick and evenly top with the filling.
Roll up tightly into logs and slice into small pieces.
Line a baking sheet with parchment paper and arrange the rolls on it.
Brush the tops with an egg yolk beaten with a little milk.
Bake in a preheated oven at 180°C (350°F) until golden brown. Let cool before serving.
