Method
Wash the cherries, remove the stems, and pat dry.
Pack the berries into a sterilized jar in layers, dusting each layer with the sugar and citric acid mixture, and gently shake the jar to fill it to the top.
Cover with a sterilized lid (do not seal) and place the jar in a pot lined with a cloth at the bottom, pour in water up to the shoulders of the jar, bring to a gentle heat and process for 10–15 minutes after boiling.
Seal tightly, invert, and wrap in a blanket until completely cooled.
Store in a cool place.
