Method

Thaw the phyllo dough in the fridge while you prep everything else—keep the package sealed.

Slice the pear and persimmon into thin rings, cut the cheese into strips.

Make your custard by whisking together eggs, cream, and a pinch of salt. Melt the butter separately.

Fold the phyllo into an accordion, layering the fruit and cheese as you go.
