Mix 100 g of cottage cheese with the flour and one egg white. Set the yolk aside for the wash. Add the sweetener and knead the dough: it should turn out firm and slightly dry.

Divide the dough into 4 portions and roll them out into thin rounds on a surface lightly dusted with flour or protein powder. The cottage cheese dough can be finicky—the edges might crack, but everything will even out after baking.

For the filling: combine 70 g of cottage cheese, the remaining egg white, and sweetener. Place the filling on one half of each round, fold the other half over to form a half-moon shape. Brush the top with the egg yolk. Bake for 40 minutes at 180°C (350°F).
