Method

Rinse the apples and place them in a large enamel bowl.

Combine the salt, sugar, and honey with water, bring to a boil, and simmer.

Remove from heat and pour immediately over the apples. Add the grape and currant leaves.

Place a plate on top and weight it down. Leave to ferment at room temperature for about two weeks.

Transfer the finished soaked apples into sterilized jars. Strain the brine and pour it over the apples.
