Wash the cucumbers thoroughly. Using the flat side of a large chef's knife or a wooden mallet, firmly smash the cucumbers until they crack with a satisfying crunch.

Cut the smashed cucumbers into bite-sized pieces. Place them in a bowl, season with salt, add the vinegar, toss well, and let them rest for 15 to 20 minutes.

While the cucumbers are marinating, finely chop the garlic. Drain the cucumbers and gently squeeze out the excess liquid. Add the garlic and soy sauce, and mix well. Finish by garnishing with sesame seeds.

Feel free to adjust the ingredients to your liking: for a spicier kick, add chili peppers and a bit more vinegar; for a milder flavor, scale back on the vinegar and garlic.
