SLOE JAM
A thick homemade sloe jam made with sugar that's perfect for tea or preserving for winter.

Method
Rinse the sloes, remove the stems, put them in a pot and add water.
Cover with a lid, bring to a boil and simmer for 2–3 minutes until soft.
Pass the berries along with the cooking liquid through a sieve, pressing through carefully to remove the pits and skins.
Return the pressed pulp to the pot, add sugar, stir well, bring to a boil and cook for 10 minutes over high heat, skimming off any foam.
Then reduce the heat and continue cooking for another 5–10 minutes until it reaches the right consistency: a drop of jam on a plate should hold its shape and not spread.
Pour the hot jam into a dry sterilized jar and seal with a lid.
