Sloe Jam
A thick and fragrant homemade jam made from tart sloe berries that keeps beautifully throughout the winter.

Method
Rinse the sloes, remove the stems, put them in a pot and add water.
Cover with a lid, bring to a boil and simmer for 2–3 minutes until soft.
Push the berries together with their liquid through a sieve, working them through thoroughly to remove the pits and skins.
Return the strained mixture to the pot, stir in the sugar, mix well, bring to a boil and cook for 10 minutes over high heat, skimming off any foam.
Then reduce the heat and continue cooking for another 5–10 minutes until set: a drop of jam on a plate should hold its shape and not spread.
Pour the hot jam into a dry sterilized jar and seal with a lid. Once cooled, the jam will be very thick and will keep well at room temperature.
