Simmer the pork jowl and offal until tender, about 1 to 1½ hours, then pat dry and sear in a pan until golden and crispy.

Chop everything into very fine dice.

Quickly sear the chicken liver separately in vegetable oil and mince it fine as well.

In butter, sauté the minced onion, garlic, and chili until soft, then add the meat and liver, pour in the soy sauce and lime juice, and cook for another 3 to 5 minutes, stirring constantly.

Season with salt and black pepper.

Serve sizzling hot on a cast-iron plate, scattered with green onions, crack an egg on top and toss it all together so the egg sets into the heat.
