Method
Cream the softened butter with sugar, add the egg yolks, baking soda quenched with vinegar, and mix well; then add the flour and knead into a soft dough.
Roll out the dough on a work surface and cut out cookies using a cutter.
Bake in the oven at 200°C (400°F) until golden brown.
Cook a syrup made of water and sugar (test for doneness by dropping a little syrup into a glass of water—it should form a soft ball).
Whip the egg whites until stiff peaks form, gradually pour in the hot syrup, add the citric acid, and beat until the frosting has cooled completely.
