Method

Mix together the semolina, milk, sugar, and baking powder. If time permits, let the mixture chill in the fridge overnight; otherwise, let it rest for at least 4 to 5 hours.

Grease a rectangular glass baking dish. Mix 2 tablespoons of molasses with 2 tablespoons of water and spread half of it across the bottom of the dish.

Spread half of the dough into the pan, level it out with wet hands, and dust with cinnamon.

Layer the remaining dough on top and smooth it out. Drizzle with the remaining molasses and slice into portion-sized pieces. Garnish with pistachios or almonds.

Bake in a preheated oven at 190°C until lightly golden. Take it out, deepen the cuts, and return it to the oven until both the top and bottom are nicely browned.

Make the syrup: bring sugar, water, and lemon to a boil, and simmer for about 10 minutes.

Pour the hot syrup over the hot dessert. Let it rest for 1 to 2 hours so the syrup absorbs fully.
