Semolina Patties with Berry Kissel
A nostalgic childhood favorite featuring tender semolina porridge patties with a crispy crust, traditionally served with fruit kissel.

Method
Pour the milk and water into a saucepan, heat it up, and add the salt and sugar.
Once it starts boiling, stream in the semolina slowly, stirring constantly and vigorously until it thickens into a solid mass.
Remove from heat and let it cool completely.
Make the kissel: put the berries in a saucepan, pour in 500 ml of water, mash them with a potato masher, and bring to a boil.
Dilute the starch in a small amount of cold water and pour it in a thin stream into the boiling berry liquid, whisking constantly.
Simmer for about another 5 minutes over medium heat, and strain the kissel if desired.
Work the egg into the cooled semolina mass until it forms a dough.
Form into small patties and coat them in dry semolina.
Fry in sunflower oil over medium heat on both sides until golden brown.
Serve the finished patties alongside the kissel.
