Method

Wash, dry, peel, and separate the mandarins into segments.

Remove all white pith to prevent the jam from tasting bitter.

Combine the segments with sugar, water, and cinnamon, and stir gently.

Let sit for 2 to 6 hours so the mandarins release their juices.

Heat the mixture gradually and bring to a boil, stirring carefully to avoid damaging the segments.

Simmer for 1-2 minutes and transfer the segments into a clean jar.

Reduce the syrup by at least a third and pour it over the segments.
