Seedless Blackthorn Jam
Fragrant homemade blackthorn jam with minimal heat treatment, which goes great with tea or as a pastry filling.

Method
Wash and dry the blackthorns, then carefully remove the pits by cutting each berry around its circumference and prying out the pit with a knife.
Weigh the flesh and add an equal amount of sugar, stir and leave at room temperature for a couple of hours, then refrigerate for 10–12 hours.
Once the blackthorns have released their juices and the sugar has dissolved, transfer the mixture to an enamel pot, bring to a boil, and simmer for 5 minutes while skimming off the foam.
Let it cool completely, then simmer again for 5 minutes.
Ladle the hot jam into sterilized jars and seal tightly.
