Method
To make the sponge: pour warm milk into a deep bowl, add the yeast and sugar, whisk everything together, and let it sit in a warm place for 15 minutes.
Meanwhile, prep the toppings: dice the sausage and pickles, grate the cheese coarsely, and mix the sauce by combining ketchup and mayonnaise in a 1:1 ratio.
Add salt, eggs, melted butter, and flour to the sponge. Knead into a soft dough. It will stick to your hands—that's normal, just oil your hands with vegetable oil, shape the dough into a ball, and leave it in a warm place for 1 hour.
Divide the dough into equal portions and let them rest in a warm place for another 15 minutes.
Shape into round flatbreads, brush with sauce, and add the toppings. Some of the pizzas can be frozen at this stage.
Bake in a preheated oven at 375°F (190°C) for 20 minutes.
If you place the sponge and later the finished dough in an oven preheated to 105°F (40°C), they will rise twice as fast!
