Method

Peel the potatoes, boil them in salted water, and mash until smooth.

Let the mash cool slightly, spread it in a thin layer over the wafer sheet, and let it soften.

Beat the eggs, add the mayonnaise, and mix well.

Dip each sausage into the egg-mayonnaise mixture, then into the breadcrumbs, place them on the potato-covered wafer sheet, and carefully roll them up into logs.
