Method

Gather all the ingredients needed for the sauerkraut shchi.

Prepare the chicken stock.

Peel the potatoes, onion, and carrot. Dice the potatoes, finely chop the onion, and grate the carrot.

Sauté the onion and carrot in vegetable oil until soft.

Add the potatoes and sauerkraut to the boiling broth and cook until the potatoes are half-done.

Stir in the sautéed onion and carrot, bay leaf, salt, and pepper.

Slice the sausages into rounds and add them to the soup along with an extra splash of broth.

Simmer the soup for a few more minutes, remove from heat, and top with freshly chopped dill before serving.
