Method

Roughly chop the tomatoes and place them in a large pot. Simmer the vegetables over low heat for 30–40 minutes until tender.

Blend or mince the tomatoes. If you prefer, pass the mixture through a sieve.

Pour the tomato puree back into the pot. Simmer over low heat for 20–30 minutes, stirring occasionally, until it thickens.

Roughly chop the hot pepper. Peel the garlic. Combine the spices with the garlic, pepper, and 3–4 tablespoons of the tomato mixture, then blend everything together.

Add the spice and garlic paste to the pot with the tomatoes, season with salt, and stir well.

Cook the sauce, stirring constantly, for 10–15 minutes. Stir in the sugar and vinegar. Ladle the hot sauce into sterilized jars.
