Method

Roughly chop the tomatoes and place them in a large pot. Simmer the vegetables over low heat for 30–40 minutes until softened.

Blend the tomatoes using a food processor or meat grinder. If preferred, press the mixture through a fine-mesh sieve.

Pour the tomato puree back into the pot. Cook over low heat for 20–30 minutes, stirring occasionally, until thickened.

Roughly chop the hot pepper and peel the garlic. Combine the spices, garlic, pepper, and 3–4 tablespoons of the tomato puree, then blend until smooth.

Add the spice and garlic paste to the pot with the tomatoes, season with salt, and stir well.

Simmer the sauce, stirring occasionally, for 10–15 minutes. Stir in the sugar and vinegar, mix thoroughly, and ladle the hot sauce into sterilized jars.
