Method

Beat the cream cheese with a mixer for a couple of minutes, or use a whisk.

Add the sugar and vanilla, and mix until smooth.

Gradually add the eggs, beating on the lowest speed.

Mix a small amount of heavy cream into the cornstarch to prevent lumps, fold it gently into the cheese mixture, then pour in the remaining cream and mix well.

Line an 18–19 cm (7-inch) springform pan with parchment paper, pour the batter in, and tap the pan gently on the counter to release any trapped air.

Bake at 250°C (480°F) for 25–30 minutes.

Let the cheesecake cool at room temperature, then chill in the refrigerator for at least 5 hours, preferably overnight.
