Method

Combine all the ingredients together

Mix until smooth, avoiding whipping so the batter doesn't incorporate air

Line an 18 cm cake pan with foil, place it on a sturdy baking sheet, and line the inside with parchment paper

Pour the batter into the pan and bake at 220°C (425°F) for 45–70 minutes using conventional top-and-bottom heat without convection, positioning the baking sheet just above the middle rack

Once baked, remove the cheesecake from the oven and let it cool completely at room temperature, then chill in the refrigerator overnight

For the chocolate ganache, bring the cream to a boil, add the chocolate, and stir until completely smooth
