Method
Dice the salmon and pulse it in a food processor or chop finely with a knife until it reaches a coarse-crumb consistency.
In a bowl, combine the salmon, mashed sweet potato, cooked peas, oat flour, egg, lime zest and juice, dill, garlic, salt, and pepper. Mix well until uniform; if the mixture is too wet, add another 1–2 tbsp of oat flour.
Form 8 small, evenly sized patties, flattening them slightly as needed.
Line a baking sheet with parchment paper and lightly grease with oil. Arrange the patties, sprinkle with flax seeds or sesame seeds if desired, and lightly brush the tops with oil.
Bake in a preheated oven at 200°C (400°F) for 15–18 minutes, flip, and bake for another 5–7 minutes until golden brown and cooked through.
Serve hot with a green salad or sautéed vegetables, drizzled with extra lime juice.
