Ruby Dressed Herring

Method

Soak the gelatin in cold water.

Grate the beets while reserving the juice. If there isn't enough, pour boiling water over the beets.

Add 1 tsp of sugar (optional) and the bloomed gelatin to the hot beet juice, stirring well.

Pour the juice into a mold in a layer about 1 cm thick and refrigerate for 2 hours.

Cut the set layer into ruby-colored diamond shapes.

Boil all the vegetables and eggs in advance.

Grate the potatoes on a coarse grater, and the remaining ingredients on a fine grater.

Mix 1 tbsp of sauce (mayonnaise + sour cream) into each grated component.

Layer the ingredients in order: onion, herring, potatoes, carrots, eggs, beets.

Decorate the top with the ruby diamond shapes.
