Traditional emerald gooseberry jam with cherry leaves, prepared in several stages to keep the berries intact.

Method
Wash the gooseberries, trim the stems, and pierce each berry with a toothpick (smaller ones can be left unpierced)
Add the cherry leaves to water and simmer over low heat for 10-15 minutes. Remove the leaves from the water but do not discard them, then add sugar to the water, bring to a boil, and cook until the sugar dissolves
Carefully pour the hot syrup over the berries in small batches, cover, and let sit for 5-6 hours
Next, place the jam on the stove, bring to a boil, and cook for 2 minutes. Let sit for 5-6 hours
Boil for a second time for 2 minutes after it reaches a boil, then leave for 5-6 hours
Before cooking for the third time, add the cherry leaves back in, bring to a boil over low heat, and simmer for 3-4 minutes
Ladle into sterilized jars
