Method

For the meringue, whip the egg whites with sugar and a pinch of citric acid until stiff peaks form.

Using a piping bag, pipe small rounds onto a baking sheet and bake at 100°C for about 1.5 hours.

For the dough, mix the egg yolks, softened butter, sugar, baking powder, and flour with an electric mixer.

Refrigerate the dough for an hour.

Roll out the dough, cut into rounds, and bake at 170°C until golden brown.

For the cream, whip the softened butter, chilled boiled condensed milk, and strong brewed coffee together.

Assemble the cookies by layering them with the cream, adding a prune and roasted peanut in the middle.
