Roasted Vegetables for Winter

Method

Roast all your vegetables in the oven until they're cooked through.

Once roasted, cover them with foil so they're easier to peel.

Pack the vegetables into jars, pour the pan juices over them, release any air bubbles, and cap them. Sterilize the jars in boiling water for 20 minutes.

Seal the jars. Let them cool completely and store only in a cool place—if it gets warm, the jars can spoil.

Come winter, when you're ready to eat, open a jar, slice up the vegetables, add some fresh herbs, salt, and garlic—absolutely delicious!
