Method
Wash the bell peppers and place them on a baking sheet.
Roast at 425°F (220°C) for about 30–35 minutes until the skins are well charred.
Transfer the hot peppers to a bag or a covered bowl and let steam for 15 minutes.
Peel off the skins, remove the seeds, and trim the stems.
Cut into large strips.
Whisk together the oil, vinegar, honey, salt, pepper, oregano, and thyme.
Stir in the thinly sliced garlic and chopped parsley.
Pack the peppers into sterilized jars, drizzling the marinade over each layer.
Process the jars in a boiling water bath for 15 minutes.
Seal, turn upside down, and wrap in a blanket until completely cooled.
