Rich Beef Aspic in an Afghan Pressure Cooker
A traditional, hearty beef aspic made with trotters and oxtail, simmered to perfection in an Afghan pressure cooker.

Method
Soak the sawed-off trotters in water for 24 hours.
Place the trotters into the Afghan cooker and add 3 liters of water. Once boiling, drain the water and pour in fresh water (at this point, you can toss in the bay leaves and allspice berries).
Cook under pressure for 3.5 hours after reaching a boil.
Shred the meat, mix in the freshly pressed garlic and salt, and pour the warm broth over everything.
Chill in the refrigerator overnight until fully set.
