Method

Rinse the Chinese chives, pat dry, and cut into 1–2 cm pieces. Mince the garlic finely.

Whisk the eggs with salt and black pepper.

Heat butter in a pan and lightly sauté the chives with garlic for about 1 minute.

Pour in the eggs and cook, stirring constantly, until you have soft, tender scrambled eggs. Let the filling cool slightly.

Dip each sheet of rice paper into warm water for 5–8 seconds until it softens.

Spread about 2 tablespoons of filling across each sheet, fold in the sides, and roll tightly.

Fry the rolls in vegetable oil for 3–4 minutes on each side until golden and crispy.
